Coconut chilli prawns with Thai basil

It’s kinda unfair to put so many good things in one dish: homemade chilli jam? Tamarind and coconut cream? Lime leaves and Thai basil? Yup, yup and yup. It’s all as creamy, tangy, spicy and aromatic as that sounds – with beautiful, uncooked prawns that poach once as the sauce heats and bonus vegies (red capsicum and broccoli) so you don’t even need to whip up a side. Grab some coconut rice and your new favourite takeaway from the freezer is on the table. 

To Serve

This is a saucy dish and needs rice or rice noodles. There are vegies included but you could easily add more, like chopped, blanched bok choy or a handful of baby spinach. Or serve alongside some of our other Asian-leaning dishes to feed a crowd.

Defrost fully, then empty into a saucepan and place over a gentle heat, stirring occasionally, until the sauce is piping hot and the prawns are just cooked and opaque.
