Cinnamon-scented lamb with eggplant

A wonderfully harmonious recipe from that ever-reliable master of flavour, Neil Perry, combining the sweetness of slow-braised lamb shoulder with aromatic spices, meltingly soft roast eggplant, fresh mint and tangy, sweet-sour, vinegar-soaked raisins. Pile it into bowls midweek with a side of mash, or make it the centrepiece of a weekend dinner party, with cous cous and the full Middle-Eastern leaning spread. 

To Serve

This dish can go so many ways. Treat it as a family-style casserole and serve with buttered mash and a salad, green beans or big pile of garlicky spinach or kale. Or dress it up with a bed of cous cous stirred through with almonds, preserved lemon and spring onions. Slivered green pistachios finish the dish nicely.

 

Ingredients

We don't add preservatives or additives to our meals - we cook with real ingredients, just like you would at home. We do occasionally use kitchen pantry staples that include some additives. For example, tomato sauce contains acetic and critic acid.

DEFROSTED: Pierce the film and microwave for 3-4 minutes or until piping hot. Alternatively, empty into a saucepan and heat gently until piping hot. FROZEN: Pierce the film and microwave for 4 minutes then stir and heat for a further 2-3 minutes or until heated through.
