Lemony chicken soup with fennel and herbs

A lemony twist on a classic chicken soup. This comforting number balances tender chicken, sweet fennel, and hearty potatoes in a lemon-spiked broth with a flicker of chilli heat. Shredded kale adds some greenery, while fresh dill and parsley bring herby flavours to the party. It’s inspired by a recipe from Alison Roman and is perfect for when you want something nourishing but not boring.

To Cook

Defrost fully before reheating gently in a saucepan or microwave-safe container, stirring occasionally, till piping hot. If the soup is too thick, you can loosen it with some water. Serve with warm crusty sourdough.
