Only the certifiably crazy would make this biriyani – a multi-layered, regal Mughal dish of spiced rice and chicken – from scratch. First there’s the basmati rice cooked in spiced stock with peas, then the marinated free-range chicken, the fried onions and crunchy toasted almonds. The final kicker? A sachet of saffron butter that melts to enrich and elevate the finished dish. Zap it in the microwave – and feast like a rajah. 

To Serve

This is a perfect, complete dinner in itself – a squeeze of lime would finish the dish nicely - but you could add a refreshing cucumber raita with mint and yoghurt on the side as well as any chutneys you have to hand.

MICROWAVE: Peel back plastic film, remove sachet of saffron butter and loosely lay film back over the tray. DEFROSTED: Microwave the tray for 4 minutes. Remove, stir, dollop saffron butter over top, return to microwave for 1 minute or until piping hot. FROZEN: Place the sachet of butter in a cup of warm water to soften. Microwave for 8 minutes. Remove, stir, dollop saffron butter over top, return to microwave for 2 minutes or until piping hot. OVEN: preheat oven to 200C. Remove the film and sachet of saffron butter and transfer the biryani tray to a similar-sized oven tray. FROZEN: cover with foil and cook for 40 minutes. Remove the foil, add the saffron butter, and cook for a further 2-5 minutes. DEFROSTED: cover with foil and cook for 25 minutes. Remove the foil, add the saffron butter and return to the oven for another 2-5 minutes.
