Claimed by Britain, loved in India and invented by someone, somewhere who loves a creamy curry. What we can all agree on is that it’s delicious! Our veggie edition features deeply roasted cauliflower, chickpeas and toasted cashews in a rich, spiced tomato-cream sauce, served over saffron basmati rice. We’ve packed some yoghurt raita to dollop on before serving and to cool things down and make you feel very chef-y. A brilliant bowl for one. 

To Serve

This is a complete meal on its own, but a dollop of mango chutney, a warm naan or a crunchy pappadum wouldn’t go astray.

Raita (yoghurt (reconstituted milk, whey powder (milk), cultures), fresh mint, fresh coriander, garlic, cumin ground, salt)

No Prep, Microwavable

Peel back the plastic film. Remove sachet of raita and lay the film back over the tray. DEFROSTED: Microwave for 3 minutes or until piping hot. FROZEN: Place the raita in a bowl of water to defrost. Microwave for 3 minutes, stir then microwave for another minute or until piping hot. Serve with the raita on the side. Microwave ovens vary considerably, please adjust heating times if necessary.
