Boscaiola sauce for pasta
Boscaiola sauce for pasta

This kind of sauce works well with a wider ribbon pasta, like fettucine or pappardelle, but there would be no shame in serving it with a chunky shape like penne or fusilli. A colourful vegetable gnocchi like pumpkin or spinach would also be delicious. Whatever the carb of choice, finish with some extra Parmesan, a good grind of pepper and serve a salad on the side, ideally with some bitter leaves like radicchio or endive into the mix.

I loved the easy instructions for this. I defrosted it over night, just boiled pasta after getting home, then heated this in the microwave while pasta was cooking. And if it wasn't easy enough, it was also no problem getting the young one to eat it!
