Black beans with roast corn and jalapeno-lime salsa

These black beans with roasted corn and a punchy jalapeño-lime salsa are serious multitaskers. Try them as a taco filling, nacho topper, burrito bowl base or spooned over rice with avo and sour cream. The beans are loaded with warming spice, while the fiery salsa is packed separately so you can dial the heat up or down. Colourful, vego-friendly and full of flavour.

To Serve

This dish is just as happy spooned over steamed rice as it is jazzed up as a nacho topper, taco filling or tucked into a toasted quesadilla. Top with a little fresh coriander and a squeeze of lime if you’ve got it on hand.

Peel back the film, remove the sachet of salsa then lay the film back over the tray. DEFROSTED: Microwave for 3 minutes or until piping hot. FROZEN: Defrost the sachet in a bowl of water. Microwave the dish for 3 minutes, stir then heat another 2 minutes more. Serve with rice or as a side dish to any grilled protein with sour cream and guacamole on the side. TIP: This dish is also a delicious filling for nachos and quesadillas. Microwaves vary, please adjust heating times if necessary.
