Prawns and mayo are such a classic Christmas combination - but we’re in favour of a good old retro prawn cocktail in a martini glass. We’re changing it up a bit by using a green herb mayo.
The sweet, succulent Queensland tiger prawns are unbelievably good with sweet flesh and a fresh, crisp texture. As for the mayo - it's a tangy, herby mayo blitzed with basil, mint, dill, parsley and cornichons, plus garlic for punch and lemon juice for tartness.
We've got you covered with the prawns and green herb mayo - you just need to assemble!
Fill your martini glass with a bit of lettuce, followed by the green herb mayo, followed by the delicious Queensland tiger prawns (be generous – it’s Christmas!).
Then add more of the mayo and a sprig of dill.
Finally, take a last prawn to the side of the glass as the piece de resistance.
