Chocolate Strawberry Croquembouche

You can make this to any size that you would like, and use only milk chocolate, or a combination of milk, white and dark.  Just use multiples of 2 punnets of strawberries to one 200g block of chocolate.  Start small to build up your construction skills!



Ingredients

4 punnets of strawberries
2 x 200g blocks of chocolate

Method

First dip all your strawberries into melted chocolate.  The easiest way to melt chocolate is in the microwave, in 30 second bursts, stirring in between.  Hold your strawberries by the green top, dip, then put your chocolate coated strawberries on baking paper covered trays and place in the fridge to firm up.

Make a circle (of about 20cm diameter) with the choc strawberries on a dinner plate, fixing them in place with a dab of melted chocolate.  Use the biggest strawberries at the bottom, working up to the smallest strawberries at the top.  Start to build up the layers, using melted chocolate to fix the strawberries in place.  Fix the next layer or strawberries in between the ones on the layer below - this will hold them in place better.  Make each new circle a little smaller than the last. Every few layers, put the croquembouche in the fridge for around 20 minutes to firm up.  Work your way up to the top, and voila!  Stick a sparkler in the top and celebrate - and if your construction has gone a bit wonky, stick some sparklers in the pile and celebrate anyway - everybody loves a chocolate covered strawberry!
