We like to think of our Vietnamese caramel and lemongrass chicken as a bit of a quiet overachiever. Sticky, savoury-sweet and deeply fragrant with lemongrass, it’s firmly up there on the Dinner Ladies' favourites list. It’s excellent straight from the tray, but it also plays very well with others. Keep reading for three very good ways to serve it.
Asian Chopped Chicken Salad
1 pack Dinner Ladies Vietnamese Lemongrass Chicken, cooked according to instructions (only pour 1/2 sauce on top) and shred
4 cups Chinese (napa) cabbage, finely shredded
1½ cups red cabbage, shredded
1 cup carrot, finely sliced
½ cup spring onions, finely sliced
1 pack crunchy noodles
Or shortcut with a good-quality Asian slaw mix
Dinner Ladies tip: Whisk together half of the provided sauce with ¼ cup rice wine vinegar and ½ tsp sesame oil. Add sliced fresh chilli if you like a little kick!
Method
In a large bowl, toss together the cabbage, carrot, and crunchy noodles. Top with the shredded lemongrass chicken and spring onions. Drizzle over the zesty dressing and toss well to coat.
Vietnamese Rice Paper Rolls
1 pack Dinner Ladies Vietnamese Lemongrass Chicken, cooked according to instructions (only pour 1/2 sauce on top) and shred
1 pack round rice paper
250g vermicelli noodles, cooked and cooled
1 cup iceberg lettuce, shredded
1 cucumber, julienned
1 carrot, julienned
Dinner Ladies Tip: Our provided Vietnamese sauce transforms into a brilliant Nuoc Cham! Simply mix together 1/2 of the sauce sachet with 6 tbsp water, one freshly squeezed lime, and some fresh Thai chili. Don't forget to sprinkle the included nuts inside the rolls for an extra hidden crunch.
Method
Dip each rice paper sheet into warm water until softened, then lay flat. Layer in a small handful of noodles, chicken, and vegetables. Fold the base up, tuck in the sides, and roll tightly. Serve with your favourite dipping sauce for a fresh, handheld dinner.
Classic Greens & Coconut Rice
1 pack Dinner Ladies Vietnamese Lemongrass Chicken, cooked according to instructions
1 pack Dinner Ladies Coconut RIce, heated according to instructions
1 bunch Chinese broccoli (gai lan), blanched
1 tbsp oyster sauce & 1 tbsp sesame oil, to dress greens
Method
Serve the sticky, golden chicken alongside fluffy coconut rice. Drizzle the blanched Chinese broccoli with oyster sauce and sesame oil for a simple, protein-packed meal that hits the spot every time. Dinner’s done.
