Preheat oven to 200 C, peel back the film, and discard the paper. FROZEN: (for best results). Defrost the whipped feta and honey in a bowl of warm water. Drizzle the carrots with olive oil. Place the tray in the oven for 25 minutes, shaking the tray a few times during cooking. DEFROSTED: remove the sachets and put them to one side. Drizzle the carrots with olive oil, place the tray in the oven for 20 minutes and shake the tray a few times during cooking. To serve, cut the corner of the sachet of whipped feta and spread it over a serving platter. Top with carrots and chickpeas. Snip the corner of the spiced honey sachet and drizzle over the dish before sprinkling on the pistachios.
