Baby carrots, spice-dusted and roasted to bring out their sweetness, perfectly balanced against a base of salty, creamy feta whipped with Greek yoghurt and sprinkled with crunchy roast chickpeas and crushed pistachios. The final kicker is a sachet of spiced honey for drizzling. Seriously, with a side dish this good, you could easily skip the meat and serve it with warm bread and a salad... but it would also play nicely with a grilled cutlet or pan-fried chicken breast, just so’s you know.  

To Serve

This makes a perfectly elegant, meat-free lunch or supper, perhaps served over rocket or baby spinach leaves and with a hunk of crusty bread for scooping up the feta. It would also elevate any simple protein: pan-fried chicken breasts, barbecued lamb or pork cutlets or charred, sliced rare steak.

Preheat oven to 200 C, peel back the film, and discard the paper. FROZEN: (for best results). Defrost the whipped feta and honey in a bowl of warm water. Drizzle the carrots with olive oil. Place the tray in the oven for 25 minutes, shaking the tray a few times during cooking. DEFROSTED: remove the sachets and put them to one side. Drizzle the carrots with olive oil, place the tray in the oven for 20 minutes and shake the tray a few times during cooking. To serve, cut the corner of the sachet of whipped feta and spread it over a serving platter. Top with carrots and chickpeas. Snip the corner of the spiced honey sachet and drizzle over the dish before sprinkling on the pistachios.
