Mapo eggplant with pork

An eggplanty twist on the classic Sichuan dish (usually with tofu) but just like the original, this one’s all about balance — silky roasted eggplant and crispy fried pork mince soaking up a richly savoury, mildly spicy sauce. Ours also keeps the spice gentle but the flavour big, making it perfect to ladle over fluffy steamed rice or toss with noodles for an easy, delicious dinner.

Spoon it over steamed rice or noodles. It’s brilliant as a side dish in a Chinese feast or as the main show spooned in lettuce cups or with a fried egg on top.






We don't add preservatives or additives to our meals - we cook with real ingredients, just like you would at home. We do occasionally use kitchen pantry staples that include some additives. For example, tomato sauce contains acetic and critic acid.

Peel back the plastic film and remove the sachet of sauce. DEFROSTED: microwave for 2 minutes, add the sauce, stir gently and microwave for a further 1-2 minutes. Alternatively, heat some oil in a frying pan, add the eggplant and pork, stirring until hot, lastly add the sauce, allow to bubble up and simmer for about 2 minutes. FROZEN: place the sauce sachet in a cup of water. Microwave the tray for 5 minutes, add the sauce, stir gently, and microwave for a further 1-2 minutes. Serve with coconut rice, steamed rice or noodles and some Asian greens. Microwaves ovens vary considerably. Please adjust heating times if necessary.

    Tasty pork mince with eggplant

    We tried this dish for the first time and found the texture lovely and soft as well as being delicious. Will definitely order this again

    Delicious But Salty

    This was great and I'd definitely get it again, however it was quite salty. I think next time I'd mix through some vegetables and make sure to serve it on unsalted rice.
