Biryani was made for special occasions — but who says Tuesday night isn't spesh? This regal little number is packed with slow-cooked lamb shoulder, spiced basmati rice, sweet peas and crispy fried onions. And the finishing touch? A sachet of minted yoghurt to drizzle over the top. It’s fragrant, flavour-packed, and made for one lucky duck (that’s you). All the biryani bells and whistles, minus the hours in the kitchen.

To Serve

This is a complete meal on its own, but a dollop of mango chutney, a warm naan or a crunchy pappadum wouldn’t go astray. 

Ingredients

Basmati rice (35%) (rice, water), lamb (25%), peas, onion, fried onion (onion, rice bran oil), salted butter (cream (milk), salt, culture), yoghurt (milk, skim milk powder, cultures), almond, vegetable stock (sea salt, maize maltodextrin, natural vegetable flavour, yeast extract, spinach, celery, cabbage, canola oil, extra virgin olive oil, cane sugar, potassium chloride, parsley), garlic, cumin ground, coriander ground, salt, turmeric, paprika, cinnamon, cardamom, ginger, garam masala, lemon zest, star anise, chilli powder. Mint yoghurt (yoghurt (reconstituted milk, whey powder (milk), cultures), olive oil, fresh mint, garlic, salt, lemon zest)

No Prep, Microwavable

MICROWAVE: peel back plastic film, remove sachet of minted yoghurt and loosely lay film back over the tray. DEFROSTED: microwave the tray for 3 minutes, stir, return to microwave for 1 minute or until piping hot. FROZEN: Place the sachet of minted yoghurt in a cup of water to defrost. Microwave for 4 minutes, stir then microwave for 2 minutes or until piping hot. Transfer to a plate and serve with minted yoghurt. Serve with warm naan bread and mango chutney if you like.
