Throw it on the barby: 3 dinners you can cook on the BBQ

There’s something about cooking dinner outside that immediately makes it feel like a holiday. It might be the smell of things sizzling away or just that little bit of peace and quiet while you’re outside keeping an eye on things. Whatever it is, you don’t need snags and chops on repeat to make the most of BBQ season. Here are three Dinner Ladies dishes that are made for a bit of barby time. 

Malaysian Chicken Thighs with Coconut Coriander Sambal

This one’s a natural on the BBQ — juicy, aromatic and deeply spiced, these marinated chicken thighs love some char-grilled marks. 

Preheat your BBQ to around 220°C and lightly oil the grill. Place the chicken pieces skin-side down and let them cook until beautifully charred. Turn after about eight minutes, then keep cooking until cooked through. Transfer to a plate and finish at the table with the fresh coconut and coriander sambal. 

Margherita Pizza

Yes, pizza on the BBQ is not only possible but it’s excellent. Crisp base, bubbling cheese and a subtle smoky flavour that makes it feel a little bit fancy.

Heat your BBQ to around 220°C with the lid closed. If you’re using a pizza stone, pop it on during preheating and let it get nice and hot. Place the pizza on the stone, tray or directly on the grates, close the lid straight away and let the BBQ do its thing. Rotate every minute or two to avoid hot spots. You’re looking at around four to six minutes on direct heat, or up to ten minutes on a stone, until the cheese is bubbling and the base is crisp. Rest for a minute, slice and serve.

Middle Eastern Lamb Flatbreads

These lamb flatbreads crisp up beautifully on the BBQ and feel far more impressive than the effort required.

Preheat the BBQ to a medium heat, around 180º to 200°C. Brush the outside of the flatbreads with a little olive oil or butter, then place over indirect heat. Close the lid and cook for three to four minutes per side, turning carefully. If they start browning too quickly, move them to a cooler zone and let the heat finish melting the cheese inside. You want lightly charred bread and a hot, melty centre.
