We like to think of lamb koftas as a real menu workhorse. These little rounds do a lot of flavour heavy lifting. Juicy lamb mince mixed with chopped onion, fresh coriander and spices galore, including cumin, ground coriander, cinnamon, paprika and dried mint. That’s a lot of ingredients to keep on hand at home, so we’ve done the hard work for you and have them ready to grill at yours.
But just how will you serve them? Keep reading for three very good options.
Lamb Kofta Pita Wraps
1 Dinner Ladies Lamb Koftas pack, cooked according to instructions
4 to 6 pita breads, warmed
1 cup iceberg lettuce (shredded)
½ cup red cabbage (pickled in white vinegar)
¼ cup crumbled fetta
Herb Salad
2 cucumbers, chopped
2 tomatoes, diced
½ red onion, finely sliced
¼ cup chopped parsley
¼ cup chopped mint
Olive oil and lemon juice, to dress
Fill each warmed pita with juicy lamb koftas, shredded lettuce and the chopped mix of cucumber, red onion, tomato, parsley and mint dressed with a splash of olive oil and squeeze of lemon. You could also pick up a tub of store-bought tabbouleh for extra ease.
For an extra colour pop, add in some pickled red cabbage and finish with our minted yoghurt mixed through with crumbled fetta for extra salty, creamy deliciousness.
Lamb Kofta Sliders
1 Dinner Ladies Lamb Koftas pack, cooked according to instructions
8 mini pita breads, warmer
1 cup shredded lettuce
Dill pickles or pickled cucumber, sliced
Pomegranate molasses, for drizzling
Warm your mini pitas and tuck in a succulent lamb kofta. Layer in freshly sliced tomatoes, crisp lettuce, and red onion for a hit of garden freshness. Top with sliced pickled cucumber or dill pickles for crunch, and finish with a generous dollop of our minted yoghurt (included with the koftas). For a final gourmet touch, a light drizzle of pomegranate molasses adds a beautiful sweet-sour flourish.
Lamb Kofta Canapés
1 Dinner Ladies Lamb Koftas pack, cooked according to instructions
2 Lebanese cucumbers
¼ cup crumbled fetta
2 tbsp chopped mint
Fresh dill (to serve)
Pomegranate arils (to serve)
Slice cucumbers into thick rounds and top each with a spoon of minted yoghurt mixed with crumbled fetta. Add a lamb kofta on top, then finish with fresh dill and a scatter of fresh pomegranate.
