Prep, Cook & Serve

Small:

Defrost fully. Toss the salad together in a bowl with spiced pecans and dressing and add a handful of rocket or baby spinach, and fresh herbs if you like. Frozen product. Defrost in refrigerator. Once defrosted, consume within 48 hours. Remove the plastic lining from the compostable tray before recycling along with cardboard sleeve.

Large:

Defrost fully. Toss the salad together in a bowl with spiced pecans and dressing and add a handful of rocket or baby spinach, and fresh herbs if you like.

How We Make It

First, we pickle julienned beetroot in a sweet pickling liquid. We steam the quinoa and mix through cooked chickpeas. The salad is topped with crumbled feta and pickled beetroot. It comes with a sachet of spiced and roasted pecans and a tangy pomegranate dressing.

Cooked Quinoa (33%) ( Quinoa, water), pickled beetroot (13%) (vinegar, beetroot, sugar, salt), chickpeas, feta cheese (10%) (milk, salt, cultures, enzymes), spiced pecan (7%) (pecan (82%), coconut oil, sugar, sea salt, rosemary, frozen, cumin ground, paprika, cinnamon, cayenne pepper), vegetable stock (sea salt, maize maltodextrin, natural vegetable flavour, yeast extract, spinach, celery, cabbage, canola oil, extra virgin olive oil, cane sugar, potassium chloride, parsley). Pomegranate dressing (pomegranate molasses (pomegranate concentrated juice, potassium sorbate), olive oil, lemon juice, garlic)

    Great salad with a hit of protein

    I use this salad for lunches and super hot days when I can't be bothered cooking. The feta and pecans come in their own pouch and you just need to heat up the quinoa. This salad is versatile as you add an egg yourself to bump up the protein
