To Cook
Defrost fully and preheat the oven to 140C. Pat dry with a paper towel. Do not remove the net. Place the porchetta on a baking tray ensuring that it is skin side up. Rub the pork skin with salt and olive oil. Cook for 2 hours then increase the temperature to 250C and cook for a further 15-20 minutes until the skin has crackled. TIP: for best results, once defrosted, leave the porchetta, skin side up uncovered in the fridge for 2 hours or overnight. Remove the net and cut the meat and crackling into thick slices, spoon over pan juices, and serve with potato gratin, roast potatoes or mash and leafy greens. Ovens vary, please adjust cooking times if necessary.

I didn't eat this (vego) but my family smashed it. I slow cooked in main oven but finished in the airfryer and my goodness that crackling was amazing - I nearly relapsed into carnivorism ;)
