To Cook
Preheat oven (FF) to 180C. Remove plastic film, sachet of icing and baking paper before baking. DEFROSTED: Bake for 30-35 minutes or until a skewer tests clean. FROZEN: Bake for 50-55 minutes or until a skewer tests clean. Cool for 20 minutes in the tin, then run a sharp knife around the edges a few times to loosen. Turn the cake out on to a rack to cool completely, removing the baking paper from the base. When the cake is completely cooled, snip the corner off the sachet and pipe the icing onto the cake.

This cake is super moist, tangy and fragrant with coconut. The lime cream cheese icing is addictive. I find it's best cooked from frozen but I like it a little undercooked and squidgy in the middle. My son, who usually dislikes sweet things, loves this cake.

Deserts & cakes are always tasty & excellent! I love that they aren’t completely ready made & that I can just pop the ready made mix in the tray in the oven myself so it’s so lovely & freshly baked. I usually bake one & take to my glass art group to share & it’s always a hit. I haven’t tried the chocolate pudding or sticky date pudding yet as they’re a bit messy to take in & share. I’d love to see you do some single serves or 2 person servings of these 2 so I can have at home.
