A multi-layered pleasure playground of a dish, heroing fregola – those toasty, cous-cous like Sardinian nuggets of semolina – with a riot of backup flavour: sweet roast corn and pumpkin, pickled red onion, jalapenos and a Parmesan-mayo dressing. This side will transform your everyday roast chook or chops – or throw in a handful of leaves and call it lunch. Whichever, just practise rolling your rrrs and accenting the first e. Frrrreh-gola, si? Si. 

To Serve

Add any greenery you have to hand - parsley, mint or coriander, plus a handful of rocket or baby spinach leaves – for a warm vego salad. Or dish it up, as is, as a bed for roast chicken, grilled lamb or steak.

Peel back film and remove the sachet of dressing. Lay the film back over the tray. Defrosted: microwave for 2-3 minutes. Frozen: defrost the dressing in a bowl of warm water. Microwave the dish for 5-6 minutes, stirring gently halfway through. Drizzle the dressing over the fregola.

    Outstanding convenience

    This dish was fantastic! After a long day moving house, this was a perfect, light yet satisfying meal in minutes. I had it on its own rather than as a side dish. Delicious.
