Chicken scallopini with mushroom sauce

Prep, Cook and Serve
Small: Defrost fully, remove the chicken from the marinade, and sear in a lightly oiled preheated frying pan for 3-4 minutes a side or until fully cooked then remove the chicken from the pan and set aside. Pour the mushroom sauce into the frying pan or a small saucepan and simmer gently till heated through. Serve the chicken with buttered mash potato or rice and top with mushroom sauce. Tip: slice the chicken into strips, sear in a hot pan till just cooked, add the mushroom sauce and stir through hot pasta.
