Prep, Cook and Serve

Small: Defrost fully, remove the chicken from the marinade, and sear in a lightly oiled preheated frying pan for 3-4 minutes a side or until fully cooked then remove the chicken from the pan and set aside. Pour the mushroom sauce into the frying pan or a small saucepan and simmer gently till heated through. Serve the chicken with buttered mash potato or rice and top with mushroom sauce. Tip: slice the chicken into strips, sear in a hot pan till just cooked, add the mushroom sauce and stir through hot pasta.

How We Make It

First , we marinate free range chicken scallopini (thin escalopes of breast) in thyme, lemon zest , garlic and olive oil. We then cook sliced mushroom with Marsala wine, Dijon mustard and cream to make the mushroom sauce. They are dished up separately, ready for you to bring together in one easy cook at home.

Goes With

Serve with buttered mash potato, rice or noodles - you could also cut the chicken into strips and toss through pasta. A simple green vegetable on the side like broccolini, spinach or zucchini would go well.
