Butter chicken

Butter chicken

Fifteen years on the menu and still in hot demand, this North Indian modern classic gets the whole family on board with gentle spicing, marinated free-range chicken, toasty cashews and a silky sauce of tomatoes and yoghurt, enriched by just a leeeetle cream and butter. Dollop it over rice and everyone’s happy.

To Serve

Serve with steamed basmati rice, tarka dahl, naan bread, a cucumber raita and chutneys for the full Indian feast. For a quick green addition, throw in a handful of baby spinach or frozen peas and finish with coriander leaves.

Ingredients

Free-range chicken thighs (48%), onion, crushed tomatoes (tomato puree, citric acid), tomato paste, cream (milk), water, yoghurt (milk, skim milk powder, cultures), butter (cream (milk), salt), cashew, chicken stock (water, free range chicken bones, onions, carrot, celery and bay leaves), ginger, rice bran oil, garlic, almond, salt, lemon juice, paprika, garam masala, cumin ground, turmeric, cinnamon, , cardamom, bay leaves, fenugreek seeds, chilli powder
