Beef meatloaf with tomato-maple glaze

Beef meatloaf with tomato-maple glaze

We’ve taken the wholesome, Brady Bunch meatloaf and stepped it up a notch, with lots of cooked down vegies in the mix and a spiced tomato and maple chutney to spread over the loaf to cook into a sticky, burnished glaze. Dish it up with a pile of buttered mash and a slaw for the sort of comforting dinner you couldn’t get anywhere but home. To serve: We love meatloaf with buttered mash – but a baked potato works too. Corn on the cob and slaw or a green salad on the side, with some hot English mustard to balance the sweetness of the glaze.

    Better than home-made!

I think I make a pretty good meat loaf - and yes, I've always put a tomato-brown sugar glaze on top. But this meat loaf exceeded mine in both flavour and texture. My hungry crowd were exceedingly satisfied with their delicious helpings of a classic comfort food. Definitely one to order again.

    Meatloaf

I haven’t had meatloaf for years and this was such a tasty one! The kids liked it but I saved the leftovers for me!
