This versatile baked frittata (with a little flour for stability) makes for a delicious canapé, picnic spread bite, a breakfast treat (with boiled eggs and herbs) or lunch with a well-dressed salad. Served up in all its forms with a sweet and punchy tomato chilli jam on top. A snacky shape shifter in your freezer.  

To Serve

Slice into 24 to serve as a canapé with the vibrant chilli jam on top, or slice it into larger pieces with a shaved fennel salad on the side for lunch.

Preheat oven (FF) to 200C. Remove plastic film and sachets before baking. FROZEN: Bake for 50-55 minutes or until a skewer comes tests clean. If the top is getting too dark, cover with foil. DEFROSTED: Bake for 30.-35 minutes or until a skewer tests clean. If the top is getting too dark, cover with foil. Allow to cool slightly before running a knife around the edges and turning out onto a tray. Slice into four and serve the tomato chili jam and the seedy sprinkle on the side. Serve with a leafy salad. Alternatively, cut into 24 squares as a canapé or snack.
