Lemon curd and raspberry "tiramisu"
There was a lot of discussion at DL headquarters about what to call this dessert. Some were pushing for trifle, others for parfait and Ian in customer service convinced that "tiramisu" would turn off the non-coffee drinkers but this not a traditional version but as tiramisu is Italian for 'pick me up' or 'cheer me up', it is definitely worthy of the title!
The sponge fingers are soaked in passionfruit lime syrup rather than coffee or a liqueur, then layered between silky smooth lemon curd, raspberry coulis and whipped mascarpone cream, making it a perfect summer dessert for the whole family!
Frozen product. Defrost in refrigerator. Once defrosted, consume within 48 hours.
If serving on a platter, transfer while still frozen and defrost in the refrigerator overnight.
Alternatively, serve defrosted straight from the tray.Slice into squares and serve topped with fresh raspberries if you like.
