Super green risoni salad

HERE'S HOW WE MAKE IT

We start by making "rice" by pulse-chopping broccoli, which we sauté down with olive oil and mix through al dente risoni (a rice-shaped pasta), baby peas and wilted kale. We then toast pepita and chia seeds for a crunchy, protein-rich sprinkle. To dress the salad, we make a pesto-esque dressing of kale, mint leaves, pepita seeds, cider vinegar and olive oil.

INGREDIENTS

Pasta (risoni), broccoli, baby peas, kale, olive oil, salt, pepitas, chia seeds.

Dressing: kale, mint, cider vinegar, extra virgin olive oil, salt, pepitas.

GOES WITH

Serve simply tossed with a handful of rocket or baby spinach leaves, as an accompaniment to our crisp-skinned salmon with salsa verde, herb-marinated lamb loin chops, or anything straight off the barbeque.

PREP, COOK AND SERVE

Frozen product. Once defrosted, consume within 48 hours.

Individual - For best results, peel back the film, remove the sachets of dressing and seeds and place in the microwave for 1 minutes (from defrosted) to 2-3 minutes (from frozen), or until just warmed through. Toss with the dressing and seeds, adding a handful of rocket or spinach leaves if you'd like, and serve warm or at room temperature.
