
Quinoa super foods salad
As well as brimming with nature's wonder foods, this salad is a total pleasure to eat, with quinoa, nuts and vegetables supplying layers of crunch and vibrant flavour. We do all the prep for you, cooking the quinoa using the absorption method, tossing it with spinach and edamame, roasting the sweet potato, toasting the almonds and the sesame seeds - then we put them together with with a particularly irresistible gluten-free soy, ginger and lemon dressing on the side. Throw in some herbs and baby spinach and you're done.

Small:
Serves one hungry person to 2 adults as a side dish.
Serve with a handful of baby spinach leaves or rocket tossed through.
Frozen product. Reheat from frozen or defrost in refrigerator. Once defrosted, consume within 48 hours.
Peel back film and remove the sachets. Lay the film back over the tray.
DEFROSTED: microwave for 3 minutes, stirring gently halfway through.FROZEN: microwave for 6 minutes, stirring gently halfway through. Defrost the dressing in a bowl of warm water.
OVEN: Remove the plastic film and sachets and cover with foil before reheating in an oven (FF) at 180C.
Add the nuts and seeds, and drizzle the dressing over the salad. Serve on its own, topped with eggs or goats cheese or as a side dish with any protein.
Can also be served at room temperature with a handful of baby spinach and rocket leaves.
Microwave ovens vary considerably. Please adjust heating times if necessary.
