4. Horseradish-dill cream

HERE'S HOW WE MAKE IT

The key to this dish is good horseradish - it has to have a strong mustardy kick to it. We mix the horseradish with delicious, cultured creme fraiche, chopped dill and chives and add a bit of lemon juice and seasoning and that's it.

INGREDIENTS

Crème fraiche, horseradish, salt, pepper, dill, chives, lemon juice.

This is a natural partner for the gravlax or hot smoked trout. You could also use it to fill small baked potatoes and top with a blob of salmon roe and a sprig of dill.

PREP, COOK AND SERVE

Fresh product. Suitable for freezing. If freezing, defrost fully and stir before use. Consume within 48 hours of defrosting.
