4. Horseradish-dill cream
The key to this dish is good horseradish - it has to have a strong mustardy kick to it. We mix the horseradish with delicious, cultured creme fraiche, chopped dill and chives and add a bit of lemon juice and seasoning and that's it.

This is a natural partner for the gravlax or hot smoked trout. You could also use it to fill small baked potatoes and top with a blob of salmon roe and a sprig of dill.
