The key to this dish is good horseradish - it has to have a strong mustardy kick to it. We mix the horseradish with delicious, cultured creme fraiche, chopped dill and chives and add a bit of lemon juice and seasoning and that's it.

This is a natural partner for the gravlax or a smoked fish but is also delicious with baked potatoes - try baking tiny cocktail potatoes and filling them with a blob of the horse-radish dill cream and topping with salmon roe.
Not suitable for freezing. Serve on blini or rye bread topped with a slice of gravlax and a blob of salmon roe.
