Freekeh (roasted green wheat) is an under-used grain and it's so delicious!! We cook it so it still has a bit of bite and jazz it up with a heap of fresh herbs and spices. We dust pumpkin in smoked paprika and fennel and roast it till caramelised and separately toast pistachios, pepitas and sunflower seeds. To dress the salad, we blend tahini and yoghurt with a little turmeric, garlic and honey.

Small:

Serve this alongside our Syrian chicken with honey, lemon and ginger or the Moroccan marinated barramundi.  It also makes a fine stand-alone dish tossed through with some rocket or baby spinach for greenery. 

Small:  Cook in the oven for best results. Peel back the film and remove the seeds, nuts and dressing. Place the foil tray in a 180 degree oven for 20 minutes (from defrosted) to 30 minutes (from frozen).  

Large:  Cook in the oven for best results. Peel back the film and remove seeds, nuts and dressing. Place the foil tray in a 180 degree oven for 30 minutes (from defrosted) to 40 minutes (from frozen). 

These foil trays are also microwave safe. Make sure there is enough room for the trays to move freely. Peel back the film and remove the nut, seeds and dressing. Microwave until piping hot. Mixing gently half way through the heating time.

Add the nuts and seeds, throw in some rocket and baby spinach and drizzle with yoghurt tahini dressing. Can also be served at room temperature.
