This is a brilliantly versatile, addictively sweet and sour condiment - you'll find endless uses for it. It's delicious drizzled over roast or grilled meat or tossed through roast vegetables or dilute it with some extra virgin olive oil and use as a salad dressing. It even goes well with strawberries - we promise! To make it we reduce balsamic vinegar with maple syrup and brown sugar till it's intense and syrupy then add some thyme for freshness. This will come as a 250ml bottle - a little goes a looong way.

Use as the base for a vinaigrette, mixed with double or triple the volume of olive oil, dressed through rocket and/or baby spinach. Scatter with roasted almonds, hazelnuts or walnuts or croutons or goats cheese for a more substantial dish.
