Cauliflower mac and cheese

HERE'S HOW WE MAKE IT

Cauliflower cheese. Mac and cheese. Both delicious, both the sort of familiar but slightly indulgent dishes we often find ourselves craving. Put them together - magic! We steam cauliflower and boil macaroni till al dente, then combine the two in a smooth, creamy Gruyere and Parmesan sauce flavoured with sage, bay leaves and nutmeg. After dishing it up, we scatter it with breadcrumbs for extra crunch.

INGREDIENTS

Pasta, cauliflower, garlic, Gruyere, Parmesan, pepper, butter, plain flour, onion, sage, bay leaves, cream, nutmeg, salt, bread crumbs.

SIZES

Small:
Serves one hungry adult as a main, two as a side
Large:
Serves two hungry adults as a main, more as a side

GOES WITH

Makes an indulgent side dish for a simple brined roast chicken, the beef meatloaf with tomato-maple glaze, or shredded pork but most people will find it quite satisfying enough with a green salad on the side.

PREP, COOK AND SERVE

Frozen product. Once defrosted, cook and consume within 48 hours.

SMALL: remove plastic film and bake in a preheated 200C oven for 25-30 min (from defrosted) to 45 min (from frozen), or until it is heated through and the breadcrumbs are golden.

LARGE: remove plastic film and bake in a preheated 200C oven for 35-40 min (from defrosted) to 60 min (from frozen), or until it is heated through and the breadcrumbs are golden.

NB: cover with foil for the last 10 minutes if cooking from frozen. 

Please note: oven temperatures vary; adjust times and temperatures accordingly and always make sure the finished dish is piping hot.
