Truffled cauliflower puree

HERE'S HOW WE MAKE IT

The cauliflower and potatoes are steamed and pureed with warmed milk scented with bay leaves and thyme, olive and truffle oil til smooth.  

INGREDIENTS

Cauliflower, potatoes, pepper, milk, salt, bay leaves, thyme, truffle oil, olive oil.

SIZES

Small:
Serves two adults as an accompaniment.
Large:
Serves four adults as an accompaniment.

GOES WITH

Serve with pies, chicken, fish, pork... anything you like, really.

 

PREP, COOK AND SERVE

TO COOK: reheat in the microwave or over a gentle heat in a saucepan.  As you reheat it, the mash may separate and look lumpy and watery for a time but if you heat it gently in a saucepan, stirring from time to time, then suddenly, magically, it will reassemble itself and be as fluffy and delicious as it was the day it was made. 

DEFROST INFORMATION: suitable for freezing. Defrost before reheating. Defrost overnight in the fridge. You can also microwave from frozen - stir every minute or so and break up any frozen lumps.
