A good quality whole egg mayo is the base for our tartare sauce - we buy this one in, not out of laziness but because of the risk of unpasteurised eggs for our lovely pregnant customers - and then fold through finely diced cornichons (baby gherkins), capers, red onion, parsley and tarragon. A final squeeze of lemon adds a pleasing zing.
