We've made these fritters really easy for you to prepare - if you can wield a tablespoon, you can cook them.
We've done all the blanching, chopping and prepping of veg, corn, pepper, coriander and spring onions and mixed it together with the eggs and flour, finished with diced haloumi. We then dish it up and snap-freeze so that all you have to do is defrost and cook.
These are perfect for brunch, supper or a healthy lunchbox filler and mini versions make a great cocktail snack.
Serve with sweet chilli or sriracha sauce, smashed avo and bacon or hot smoked trout, with a pile of rocket leaves on the side.
PLEASE NOTE: this product is raw and needs to be fully cooked before consumption.
Defrost fully, then heat a lightly oiled frying pan over a medium heat and spoon the fritter mix (about 100ml per fritter) into the pan, leaving space to flip them. Cook for 3 minutes or until golden on each side and cooked through. Remove from the pan and drain on absorbent paper.
Makes 8-10 patties. Also makes about 30 small canapes (cook for 2 minutes each side or until golden and cooked through).
DEFROST INFORMATION: defrost overnight in the fridge. Once defrosted, keep refrigerated and cook within 48 hours.
