Defrost fully before cooking. Place a lightly oiled frying pan over a medium heat and spoon in the fritter mix (approximately 2 tablespoons per fritter), leaving space to flip them. Cook for 3 minutes each side or until golden and cooked through. Drain on paper towel and serve with sweet chilli sauce and/or smashed avocado. Makes approximately 8 fritters. Can also make about 30 small canapes - cook on each side until golden and cooked through. Top with caramelised onion or crème fraiche.

We've made these fritters really easy for you to prepare - if you can wield a tablespoon you can cook them!
We've done all the blanching, chopping and prepping of veg, corn, pepper, coriander and spring onions and mixed it together with the eggs and flour, finished with diced haloumi. We then dish it up and snap-freeze so that all you have to do is defrost and cook.
