HERE'S HOW WE MAKE IT

As well as brimming with nature's wonder foods, this salad is a total pleasure to eat, with nuts, herbs and vegetables supplying layers of crunch and vibrant flavour. We do all the prep for you, cooking the quinoa using the absorption method, roasting the sweet potato, toasting the almonds and the sesame seeds - then we put them together with the spring onions, herbs and baby spinach, with a particularly irresistible gluten free soy, ginger and lemon dressing on the side.

INGREDIENTS

Quinoa, spring onion, parsley, mint, almonds, sesame seeds, sweet potato, sumac, olive oil, salt, spinach, edamame, lemon juice, soy sauce (gluten free), sesame oil, ginger, honey, water.

SIZES

Small:
Serves two adults for lunch, as a light supper or side salad.
Large:
Serves four adults for lunch, as a light supper or side salad.

GOES WITH

This makes a lovely lunch or light supper or serve as a side salad to accompany grilled fish, chicken or haloumi.

PREP, COOK AND SERVE

Not suitable for freezing.

TO ASSEMBLE: toss the salad with dressing, sprinkle on almonds and sesame seeds and dish up on its own for a vegetarian lunch or light dinner, or serve as an accompaniment.
