A flavour-packed meat-free dinner, with the cheery colours of the Italian flag. We make a filling of ricotta, spinach and parmesan with a little lemon zest and basil and use it to stuff fresh pasta which is then coated in tomato sauce, a handful of mozzarella and a layer of bechamel. Bake in a preheated 180C oven for 30 (small) or 45 minutes (large) from fresh or 45/60 minutes from frozen. Check that it's hot through to the middle, rest for five minutes, then serve.
