This sweetly spiced, roughly mashed pumpkin makes a delicious base for a anything with Middle-Eastern flavours, like a chermoula chicken or a pile of lamb koftas, especially when drizzled with green tahini sauce - it's the interplay of contrasting colours and flavours that does it. You could also make it the centrepiece of a vegetarian dinner on a bed of cous cous, scattered with dukkah or toasted pepitas. To reheat, pierce the plastic film and place in the microwave for 3 minutes (small) to 5 minutes (large). If frozen, follow the same microwave times then remove the plastic film, stir, replace film loosely and heat for a further 2 minutes (small) to 5 minutes (large) or until piping hot. Can also be reheated in a saucepan on a stove top, stirring occasionally until piping hot. Suitable for freezing.
