Spiced lentil and vegetable ragout

HERE'S HOW WE MAKE IT

A warming, vegetable-laden dish, with a nod to the Middle East in its spicing. We slowly cook the lentils with cumin, coriander, turmeric, paprika, cinnamon and star anise until fragrant and soft, then add crushed tomatoes, carrot, celery and spinach before finishing with fresh coriander and lemon juice. Suitable for freezing; defrost fully before reheating gently in a saucepan or microwave, stirring occasionally, until piping hot and serve with warm Turkish bread and some extra fresh herbs.

INGREDIENTS

Brown lentils, garlic, celery, carrots, cumin, fresh and ground coriander, pepper, spinach, rice bran oil, onions, salt, ginger, turmeric, paprika, star anise, ground chilli, cinnamon, tomato paste, crushed tomatoes, vegetable stock (Massel), lemon juice.
