Slow-poached spiced quinces
There is something magical about a tray of quinces slowly cooking in the oven, turning from pale greeny-gold through apricot to deepest terracotta, with their perfume filling the house. We're cooking them here in a light sugar syrup, spiced with vanilla bean, cinnamon and star anise, till they're sweet, dusky pink and tender. Poached this way, with some of their ruby syrup on the side, they can lean in the direction of either dessert or breakfast, depending on what you choose to serve them with - with yoghurt and granola or with ice cream or cream, toasted nuts and/or crumble. May be eaten warm or cold. To reheat in the oven, remove plastic film and tub of syrup, pour syrup over quinces, cover with foil and place in a preheated 180C oven for 20 minutes or until warmed through (30-35 minutes from frozen). To microwave, peel back film, remove tub of syrup and pour syrup over quinces, replace film loosely and heat for 4 minutes (5 minutes from frozen) or until warmed through. Please note, these trays are microwave safe; make sure to put only one tray in microwave at a time. Serving size is four halves.
