Root vegetable mash

HERE'S HOW WE MAKE IT

A wintry blend of celeriac, sweet potato, carrots and potatoes - okay, we know they're not all root veg but they have a sort of rooty vibe - with more depth and interest than your everyday mash. The veges are steamed and roughly  pureed with garlic and butter until smooth.  

INGREDIENTS

Celeriac, sweet potato, carrots, potatoes, garlic, butter, salt.

SIZES

Small:
Serves two adults as an accompaniment
Large:
Serves four adults as an accompaniment

GOES WITH

Josh's beef and red wine pie or the duck confit. Also great alongside a grilled steak or pile of chops.

PREP, COOK AND SERVE

Frozen product. Once defrosted, reheat and consume within 48 hours.  You can also microwave from frozen - stir every minute or so and break up any frozen lumps. 

Defrost fully, before reheating gently in a saucepan or microwave-safe container, stirring occasionally, till piping hot.  As you reheat it, the mash may separate and look lumpy and watery for a time but if you heat it gently in a saucepan, stirring from time to time, then suddenly, magically, it will reassemble itself and be as fluffy and delicious as it was the day it was made.
