We made this last about a month or so ago and, to be frank, people went nuts for it. There's just something about the simple, homely honesty of the dish, the flavour of something that has been homemade, with love, except without that annoying step of actually making it. So, while the ingredients list is short - the pastry contains just butter and flour, the filling apples, butter, sugar and a bit of spice - the end result is pretty special. But - and here's a big warning - we're making in this pie in finite quantities because even in a professional kitchen we have our pastry-making limits. If you've been waiting for its return, wait no longer! Get in while you can! We'll be snap-freezing the pies for freshness; don't defrost, just bake in a pre-heated 180C oven for 60-70 minutes or until golden brown and heated right through. Cover with foil and cook on for an additional ten minutesto crisp up the base If you want to remove the cooked pie from its foil container to look prettier for serving (or if you need to hide the evidence), use scissors to snip the foil sides at four points then fold back flat and carefully lift the pie out. Cut into wedges and serve with doublele or whipped cream or ice cream.
