Rice vinegar pickled vegetables
We julienne the carrot and daikon then pickle them lightly in sweetened rice wine vinegar - these make a lively addition to pulled pork or any grilled meat or fish - and they're not half bad as a snack straight from the fridge.
Daikon, carrot, rice wine vinegar, salt, sugar, tap water.

Pulled pork or on the side of any Asian dish - they also go weirdly well with hot smoked trout.
Drain liquid off vegetables before serving.
