A properly made Greek salad is a perfectly balanced thing; sweet tomatoes, savoury olives, crunchy cucumber, salty feta, piquant onions and the bright freshness of dill and mint. To keep the salad fresh and crisp until you serve it, we're using our mildly brilliant Dinner Ladies Layering System (patent pending), with cheese, olives and finely sliced red onions at the bottom, then layers of sweet grape tomatoes, sliced cucumber and green capsicum, finishing with sprigs of dill and mint at the top, nestled high and dry, with the lemon and olive oil dressing in a separate container. Empty the dressing into the salad and toss through gently before serving. Not suitable for freezing (we didn't really have to say that, did we?).
