
Potato, celeriac and leek soup
We love a traditional leek and potato soup - here it's given a twist of nutty flavour from the ugly yet beautiful celeriac. The vegetables are gently sweated in butter with onions and herbs then covered in half and half vegetable stock and milk before being pureed and finished with chopped chives. Reheat gently and serve with warm bread. Serves 2-3. Gluten free. Vegetarian. Suitable for freezing - defrost before reheating as above.
