Your basic standby bowl of olives is taken to a new level when they've been infused with herbs, citrus zest and garlic. Serving them warm allows those flavours to develop and makes them, frankly, utterly addictive. We're using a mixture of kalamata and green olives and heat them gently with olive oil, strips of lemon, lime and orange zest, sliced garlic, thyme, bay leaves and chilli then let them marinate before dishing them up. At home, place in a saucepan or microwave (remove the lid and put it back on ajar) and heat till just warm, not piping hot. Scoop out of the oil with a slotted spoon and serve with drinks. This will come in a 380ml container and will last in the fridge for weeks, even months.
