Finely sliced, crisp fennel, cucumber and red onion pickled in a light sweet and sour liquor makes a fresh accompaniment to the rich gravlax, maybe scattered over a bed of baby salad leaves or on slices of buttered rye bread. It can't be frozen but will keep well in the fridge for weeks. 380ml serve - enough for four with the gravlax.

As well as salmon, this pickle goes beautifully with pork or soft white cheese and will liven up any salad - try baby spinach, avocado, smoked trout and the pickled vegetables. Is good.
