We've adapted this Ottolenghi recipe so that it works in the freezer - you'll just need to add a handful of herbs or leaves (e.g coriander, parsley, spring onions, baby spinach) to complete it as a salad. This dish is a riot of colour and flavour with bouncy pearls of giant cous cous as a backdrop and currants, preserved lemon, and flaked almonds as highlights. It works just as well as a warm side dish without the herbs. Defrost before emptying the dressing and nuts container into the couscous and tossing through, with some chopped herbs and salad leaves of your choice. To serve as a warm side dish, peel back the film and remove the nuts and dressing tubs. Loosely replace the film and microwave for 2 minutes. Add the dressing and the almonds and stir through. Microwave for a further 1 minute or until piping hot and serve, sprinkled with chopped herbs.
