Prep, Cook & Serve

Small:

To serve as a salad, defrost fully before adding the nuts, dressing and your choice of chopped herbs such as coriander and mint and fresh salad leaves. To serve as a warm side dish. Gently peel back the film and remove the sachet of nuts and dressing. Lay the film loosely across the top of the tray. DEFROSTED: microwave for 4 minutes, then add the almonds and dressing and mix through. FROZEN: microwave for 6 minutes, stir and heat for a further 2 minutes. Add the almonds and dressing and mix through. Stir through your choice of herbs and salad leaves. Microwave ovens vary, please adjust heating times if necessary. Frozen product. Cook from frozen or defrost in refrigerator. Once defrosted cook and consume within 48 hours.

How We Make It

This dish is a flavourful salad with bouncy pearls of giant cous cous as a backdrop and currants, preserved lemon, and flaked almonds as highlights. We've adapted this Ottolenghi recipe so that it works in the freezer - you'll just need to add a handful of herbs or leaves (e.g coriander, parsley, spring onions, baby spinach) to complete it as a salad. It works just as well as a warm side dish without the herbs.

Cooked pearl cous cous (67%) (cous cous (wheat), water), preserved lemons (lemon, salt, lemon juice, spices), currants, almonds, chilli. Dressing (olive oil, lemon juice, garlic, salt).

Goes With...

Serve warm with Persian lamb or any grilled protein.
For a more substantial vegetarian dish, add grilled halloumi or feta along with herbs and salad leaves.

    Fluffy and perfect addition to multiple meals!

    The couscous is great hot or cold and we used it with the honey mustard chicken and potato bake as well as with the meatballs to make small portions enough for two hungry adults!

    The lemon sauce and almonds make it extra special!
