Moroccan vegetable harira
We cook our own lentils and chickpeas for the harira - the rinsing, soaking and pre-cooking is a palaver but they're the heart of the dish and we think it's worth it.
We then cook a base of vegetables - onions, garlic, carrots and celery - until soft and sweet, before adding a blend of Moroccan spices - cumin, cinnamon, paprika, ginger and saffron. We simmer the veg, chick peas and lentils with tomatoes and vegetable stock until tender and finish the dish with plenty of fresh chopped coriander and lemon juice - healthy, hearty and nourishing for the body and soul!

TO COOK ALL SIZES: empty into a saucepan and place over a gentle heat, stirring occasionally till piping hot (70C), or empty into a microwave-safe container and heat 2-4 minutes, stirring occasionally, until piping hot throughout.
DEFROST INFORMATION: suitable for freezing. May be cooked straight from frozen or defrosted overnight in the fridge. Keep refrigerated and consume within 48 hours. For a quick defrost, place sealed bag in room temperature water and ensure that you finish cooking within 2 hours of starting the defrosting process.
