We cook our own lentils and chickpeas for the harira - the rinsing, soaking and pre-cooking is a palaver but they're the heart of the dish and we think it's worth it.

We then cook a base of vegetables - onions, garlic, carrots and celery  -  until soft and sweet, before adding a blend of Moroccan spices - cumin, cinnamon, paprika, ginger and saffron.  We simmer the veg, chick peas and lentils with tomatoes and vegetable stock until tender and finish the dish with plenty of fresh chopped coriander and lemon juice - healthy, hearty and nourishing for the body and soul!

Chickpeas, lentils, carrots, celery, cumin, cinnamon, paprika, ginger, nutmeg, chilli flakes, saffron, fresh coriander, garlic, onion, tomato paste, crushed tomatoes, vegetable stock (Massel), lemon juice, olive oil, salt
