A vibrant, vegetarian Indian curry with a hint of chilli and the sweetness of roasted orange sweet potato and the earthiness of kale in a spiced coconut sauce. Reheat gently in a saucepan or microwave, stirring occasionally, until piping hot (be careful - the sweet potato breaks apart easily). Serve with basmati rice, chutneys, raita and any other curry. Suitable for freezing; defrost fully before reheating as above.
