Iggy's sourdough dinner rolls

HERE'S HOW WE MAKE IT

We love to queue on a weekend morning for our Iggy's fix - their bread is so distinctive, so deeply caramelised and delicious - but having a stash in the freezer is the next best thing. These rolls are baked in giant wheels of 36, which gives the rolls their distinctive shape and crust. They made in the time-honoured sourdough tradition, with no yeast, only the natural leaven from the sourdough starter, and they're pretty special.

INGREDIENTS

Unbleached whole wheat flour, sea salt, filtered water.

Serve warm with butter or stuff with cold schnitzel, mayo and lettuce or leg ham and mustard for some very lucky school lunches.

PREP, COOK AND SERVE

Break off and defrost what you need. For a crisper crust, refresh in a preheated 180C oven for five minutes.
